Exploring the traditions and culture of Mexico is part of the Rancho La Puerta experience. In honor of Mexico’s Independence day, The Ranch threw a fiesta. Mexico’s Independence Day commemorates September 16, 1810, when priest Miguel Hidalgo made the cry, “Viva Mexico,” in the town of Dolores, in the North-Central part of the Mexican state of Guanajuato. This “cry of independence” started the revolt against Spain.
The dining hall cooks and staff had a camaraderie and positive energy about them that was contagious.
The traditional Chile en Nogada, a stuffed poblano chili, was masterfully created. The entrée had green poblano chilies, white sauce, and a sprinkling of red pomegranate seeds. It was served with a side of refried beans and Mexican rice. The colors of Chile en Nogada represent the colors of the Mexican flag.
Dessert options included a tequila flavored ice cream served with an organic amaranth, a sweet and gluten-free grain. There were also sweet slices of cornbread drizzled with cajeta, which is a caramel sauce made from goat’s milk, salt, vanilla, and cinnamon. It was a wonderful celebration.
